Preheat oven to 350. Beat eggs, add sugar and flour. Mix until blended (batter will be clumpy). Add nutella and mix together. Shape cookies into balls, place on ungreased cookie sheet. Bake for 10 mins. Makes 36 cookies.
Made this recipe again…it is so good but even better if you wait a few days before eating!
While I like beans and love using them in cooking, I hate baked beans. Something about that flavor sends me over the edge and I have tried supposedly some of the best baked beans but still can’t stand them. So when I needed to make some beans for a party, I looked for an anti-baked bean recipe. I found this one and positively love it. Try it next time you need to make some beans, maybe you will be a convert as well.
However, having done this recipe several times I have modified it to better fit my taste. Here is the modified version.
2 cans black beans, drained and rinsed
2 cans kidney beans, drained and rinsed
2 cans canellini beans, drained and rinsed
1 red bell pepper, diced
1 yellow bell pepper, diced
1 orange bell pepper, diced
1 green bell pepper, diced
16 oz. frozen corn, defrosted
2 red onions, diced
2 jalapenos, seeded and diced
entire head of minced garlic but better if grated
one bunch of fresh cilantro leaves (no stems), chopped
1/2 cup extra virgin olive oil
1/2 cup red wine vinegar
2 TSB. honey, I use key lime flavored honey
Juice from one freshly squeezed lemon
Juice from one freshly squeezed lime
1 TSB. salt (adjust to taste)
1 TSB. freshly ground black pepper (adjust to taste)
1 TSB. cumin
1 TSB. chili powder
2 TSB. Hungarian Paprika
Combine all ingredients and let sit overnight for juices to mix. Enjoy!
