Borrowing from a couple of recipes, I made this watermelon salsa. This is a no tomato salsa but you really don’t miss it. It is good with chips, fish, or chicken as the flavor is both sweet and hot depending on the intensity of the jalapeno. You can increase the heat of the salsa by adding more cilantro and jalapeno or increase the sweet of the salsa by adding more mint and honey. If you taste as you go, you’ll get it just right. This makes a ton of salsa so you can divide the recipe if needed.
One small watermelon finely chopped and drained in colander
3 cucumbers peeled with seeds removed finely chopped
Bunch of scallions finely chopped
Half bunch of cilantro leaves finely chopped
Half bunch of mint leaves finely chopped
One red pepper, one yellow pepper, one orange pepper all finely chopped
4 fresh jalapeno peppers finely chopped (use seeds to increase heat)
Juice of one lime
1/2 cup of red wine vinegar
Salt and pepper
One cup of honey
Mix all together and let rest for one hour before serving to blend the flavors. Enjoy!
